I came across this recipe because of my brother, and because he is a vegan. I re-vamped the recipe for my liking, and so I didn't have to make a run to the health food store every time I wanted to make it. You could use soy milk and butter and call it vegan, the choice is yours! Either way, filled with strawberries, bananas and a sprinkling of powdered sugar, it's perfect for any breakfast.
Oh, and die the batter green, St. Patty's day is coming up! We had pink crepes for V-day this year, the kids loved it.
